It is finally fall in the south, and the weather is starting to cool down. You know what that means…CHILI TIME! As soon as the temperature reached the 50’s, I grabbed my bag and headed to the grocery store to grab my chili supplies. My recipe is so simple, and can be made in the instant pot on 30 mins! As moms, we need quick easy, but yummy meals to feed our hungry families. Here is my delicious Chili recipe that I have used for years:
Ingredients:
- 2 pounds of ground beef (brown meat on stove in olive oil until cooked)
- 4 cloves of garlic
- 1 green bell pepper, diced
- 1 yellow onion, chopped
- 1 (16oz) can of kidney beans
- 1 (16oz) can of pinto beans
- 1 (16oz) can of white northern beans
- 1 (28oz) can of diced tomatoes
- 1 (15oz) can of tomato sauce
- 2/3 container (46oz) tomato juice
- 1/4 cup flat leaf parsley (I just sprinkle dried parsley)
- 1 tsp oregano
- 1/4 tsp cayenne pepper ( I leave this out bc of the kids)
- 3 tbsp chili powder
- 1 tsp pepper
- 1 tsp salt
- 1 tsp sugar
- 2 tsp cumin
- shredded cheese
- sour cream
Directions:
- place cooked meat, beans, spices, and liquids into crock pot or instant pot
- crock pot – cook on hi for 3-4 hours or low for 6-8 hours
- instant pot- mine has a “chili” setting, which is pressure cook for 30 mins
- when done, top with cheese & sour cream! ENJOY!
